Ingredients:
- 1 cup quinoa (rinsed)
- 2 cups filtered water
- 1 cup fresh parsley (finely chopped)
- 1/2 cup fresh mint (finely chopped)
- 1 cup cherry tomatoes (diced)
- 1 cucumber (diced)
- 2 –3 green onions (thinly sliced)
- 3 clove garlic (finely minced or grated)
- Zest of 1 lemon
- 8 tbsp lemon juice
- 1/2 cup extra virgin olive oil
- 2 tsp honey
- Sea salt and cracked black pepper (to taste)
Instructions
Instructions:
- Add quinoa and water to a pot. Bring to a boil, then reduce heat, cover, and simmer for 12–15 minutes or until water is absorbed. Remove from heat and let cool.
- Fluff quinoa with a fork and transfer to a large bowl.
- Add parsley, mint, tomatoes, cucumber, green onions, garlic, and lemon zest to the bowl.
- In a small jar or bowl, whisk together lemon juice, honey, olive oil, salt, and pepper.
- Pour dressing over the quinoa mixture and toss until well combined.
- Taste and adjust seasoning if needed. Chill before serving if desired.
