Quinoa Tabbouleh

A healthy twist on classic tabbouleh, this quinoa version is protein-packed, naturally gluten-free, and bursting with fresh herbs and citrus.

Ingredients

Ingredients:

  • 1 cup quinoa (rinsed)
  • 2 cups filtered water
  • 1 cup fresh parsley (finely chopped)
  • 1/2 cup fresh mint (finely chopped)
  • 1 cup cherry tomatoes (diced)
  • 1 cucumber (diced)
  • 2 –3 green onions (thinly sliced)
  • 3 clove garlic (finely minced or grated)
  • Zest of 1 lemon
  • 8 tbsp lemon juice
  • 1/2 cup extra virgin olive oil
  • 2 tsp honey
  • Sea salt and cracked black pepper (to taste)

Instructions

Instructions:

  • Add quinoa and water to a pot. Bring to a boil, then reduce heat, cover, and simmer for 12–15 minutes or until water is absorbed. Remove from heat and let cool.
  • Fluff quinoa with a fork and transfer to a large bowl.
  • Add parsley, mint, tomatoes, cucumber, green onions, garlic, and lemon zest to the bowl.
  • In a small jar or bowl, whisk together lemon juice, honey, olive oil, salt, and pepper.
  • Pour dressing over the quinoa mixture and toss until well combined.
  • Taste and adjust seasoning if needed. Chill before serving if desired.
