A skin-loving twist on a comfort food classic—this Rosemary Apple Turkey Burger with Rosemary Aioli satisfies cravings and supports clear, radiant skin.

Ingredients

For the Burgers:

  • 2 lb ground turkey
  • 1 large apple (peeled and grated)
  • 1 egg
  • 4 cloves garlic (minced)
  • 4 tablespoons fresh rosemary (finely chopped or 2 tsp dried)
  • 2 tablespoon Dijon mustard
  • 2 tablespoon coconut aminos (or gluten-free tamari)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil (for cooking, or avocado oil for grilling)

For the Rosemary Aioli:

  • ¼ cup soy-free vegan mayo
  • 1 drop rosemary essential oil sub 2 tsp dried rosemary
  • 1 small clove garlic finely minced
  • 1 tsp fresh parsley optional
  • Pink rock or grey sea salt to taste

Instructions

Prepare the Burger Mixture:

  • In a large bowl, combine ground turkey, grated apple (squeeze out excess moisture), garlic, chopped rosemary, Dijon mustard, coconut aminos, salt, and pepper.
  • Mix gently until just combined – don’t overmix to keep the burgers tender.

Shape the Patties:

  • Divide the mixture into 8 equal portions and shape into patties.
  • Make a slight indentation in the center of each patty to help them cook evenly.
  • Freeze whatever portions you won’t be eating immediately.

Stovetop Method:

  • Heat olive oil in a large skillet over medium heat.
  • Cook the patties for 4-5 minutes per side until browned and cooked through (internal temp of 165°F/74°C).

Preheat the Grill:

  • Preheat your grill to medium-high heat.
  • Brush the grates with oil to prevent sticking.
  • Grill the patties for 5-6 minutes per side, flipping once.

Prepare the Aioli:

  • Add ¼ cup soy-free vegan mayo, 1 drop rosemary essential oil (or 2 tsp dried rosemary), 1 finely minced small garlic clove, 1 tsp chopped fresh parsley (optional), and a pinch of pink or grey sea salt to a small bowl.
  • Mix until smooth and creamy, then chill for 10–15 minutes before serving.

Assemble and Serve:

  • Serve the turkey rosemary apple burgers on gluten-free buns, lettuce wraps, or over a bed of greens.
  • Top with avocado slices, arugula, and caramelized onions.
  • Add a dollop of Dijon mustard for extra flavour.
