Instructions
Prepare the Burger Mixture:
In a large bowl, combine ground turkey, grated apple (squeeze out excess moisture), garlic, chopped rosemary, Dijon mustard, coconut aminos, salt, and pepper.
Mix gently until just combined – don’t overmix to keep the burgers tender.
Shape the Patties:
Divide the mixture into 8 equal portions and shape into patties.
Make a slight indentation in the center of each patty to help them cook evenly.
Freeze whatever portions you won’t be eating immediately.
Stovetop Method:
Heat olive oil in a large skillet over medium heat.
Cook the patties for 4-5 minutes per side until browned and cooked through (internal temp of 165°F/74°C).
Preheat the Grill:
Preheat your grill to medium-high heat.
Brush the grates with oil to prevent sticking.
Grill the patties for 5-6 minutes per side, flipping once.
Prepare the Aioli:
Add ¼ cup soy-free vegan mayo, 1 drop rosemary essential oil (or 2 tsp dried rosemary), 1 finely minced small garlic clove, 1 tsp chopped fresh parsley (optional), and a pinch of pink or grey sea salt to a small bowl.
Mix until smooth and creamy, then chill for 10–15 minutes before serving.

Serve the turkey rosemary apple burgers on gluten-free buns, lettuce wraps, or over a bed of greens.
Top with avocado slices, arugula, and caramelized onions.
Add a dollop of Dijon mustard for extra flavour.
Notes
Tips:
Make It Paleo: Serve on lettuce wraps or over a salad instead of buns.
Meal Prep Friendly: The patties can be made ahead and stored in the fridge for up to 2 days or frozen for up to 3 months.
Add More Flavour: Mix in 1 tablespoon of chopped fresh sage or thyme for a more herbaceous flavour.
