Batch Cooking: Make a large batch of these burgers and freeze them for those busy days when you need a quick, homemade meal. Simply place a square of parchment paper between each patty to prevent sticking. Alternatively, using a burger mold can make the process even easier. I love this one and find it incredibly helpful for creating and storing perfectly shaped burgers every time! 

Quick and Easy: Simply take the burgers out of the freezer, let them thaw for a few minutes, and throw them on the grill or pop them in the oven. They can also be cooked in a frying pan for added versatility. It’s that easy!

Steak Spice black Bean Burger

Steak Spice Black Bean Burger

Filled with skin-loving ingredients, these Black Bean Burgers are vegan, nutritious, and perfect for summer BBQs.

Ingredients

For the Burger:

  • 1 cup quinoa (cooked)
  • 1 white onion
  • 3 fresh cloves garlic (minced)
  • 4 cups cremini mushrooms (chopped roughly)
  • ½ cup pumpkin seeds
  • cup chives (chopped)
  • ½ cup parsley (chopped)
  • 2 tbsp nutritional yeast
  • 2 tbsp ground flax
  • 1 398 ml can of black beans (rinsed and drained)
  • 1 tbsp tamari

For the Steak Spice

  • 1 tsp Black peppercorns
  • 1 tsp Salt
  • 1 tsp Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Onion
  • ½ tsp Coriander
  • ½ tsp Dried Dill
  • ½ tsp Dried Rosemary
  • ½ tsp Dried Thyme
  • ½ tsp Mustard Seed
  • Red Pepper Flakes (optional)

Instructions

Prepare the Steak Spice:

  • Combine the black peppercorns, salt, paprika, garlic powder, onion powder, coriander, dried dill, dried rosemary, dried thyme, mustard seed, and red pepper flakes (if using).
  • Set aside.

Prepare the Burger Mixture:

  • Cook quinoa as per package instructions. Reminder: you will only need 1 cup of cooked quinoa.
  • In a large skillet, sauté the finely chopped white onion over medium heat until translucent, about 5 minutes.
  • Add the minced garlic and chopped cremini mushrooms. Cook until the mushrooms release their moisture and start to brown, about 7-10 minutes.
  • In a food processor, pulse the pumpkin seeds until they are coarsely ground.
  • In a large mixing bowl, combine the cooked quinoa, sautéed onion, garlic, mushrooms, ground pumpkin seeds, chopped chives, chopped parsley, nutritional yeast, and ground flax.
  • Add the drained and rinsed black beans to the bowl. Using a potato masher or food processor combine all ingredients.
  • Add the 1 tbsp of steak spice and the tamari to the mixture. Mix until well combined.

Form and Cook the Burgers (see notes)

  • Form the mixture into burger patties, about ½ inch thick.
  • Freeze burger patties for at least 30 minutes before barbecuing. If cooking in the oven you can cook right away.
  • Preheat oven or barbecue to 350°.
  • Cook for 30 minutes, flipping half way through.

Notes

  • If barbecuing, freeze the burger patties for at least 30 minutes until
  • They are firm. They can be stored in your freezer for up to 3 months.
