Stracciatella Soup with Skin-Boosting Bone Broth

It’s midmorning and you’re bundled up in a big cozy sweater because the temperatures outside are super chilly. All you want is something to warm up your insides.

And my favourite something to do that? Bone Broth.

I bring a few cups of my homemade broth to a boil (it smells amazing, ps) and add some spices and herbs. It gets poured into a big white soup bowl that I carefully walk over to the table because it’s filled to the brim.

The aroma of the broth fills the room and I sip on the first piping hot spoonful.

This is a ritual I do almost every day. I switch up the things I mix into the broth, but my go-to recipe is this dairy-free stracciatella soup. I love that it’s not only full of nutrients that work to heal your gut lining but also improve the health of your skin.

Because one of the most important things we can add to our diet to support our skin is collagen. Bone broth happens to be one of the best supplies of collagen.

Making It Dairy-Free

Traditionally, stracciatella soup contains cheese. Unfortunately, dairy is an acne-triggers I discuss in one of the first few lessons of The Clear Skin Solution.

I worked around this in my version of stracciatella soup by using nutritional yeast in place of the usual parmesan. If you’ve never used nutritional yeast before, it’ adds a cheesy flavour to any dish. The perfect substitute in this recipe.

Stracciatella Soup with Skin-Boosting Bone Broth

Prep Time: 5 minutes
Cook Time: 2 minutes
Total Time: 7 minutes

Ingredients

  • 4 cups chicken bone broth
  • 1 clove garlic minced
  • Pinch ground nutmeg
  • 2 eggs whisked
  • 1 cup loosely packed baby spinach thinly sliced
  • 1 tbsp each fresh thyme basil, and parsley, thinly sliced (sub 1 tsp Italian seasoning)
  • Unrefined sea salt to taste

Optional

  • 1-3 tsp nutritional yeast for cheesy flavour

Instructions

  • Add broth, garlic and nutmeg to a pot and bring to a boil over high heat.
  • Use a fork to stir the broth in a circular motion.
  • Reduce heat to low and gradually drizzle the whisked egg into the moving broth.
  • Stir gently with the fork to create thin strands of the egg -- about one minute.
  • Add fresh herbs and baby spinach. Stir to incorporate.
  • Add the desired amount of sea salt and nutritional yeast (if using).
  • Serve immediately
