What’s the only thing that makes me look forward to the end of summer?

Peach season. 

This sweet and fuzzy fruit is now ready for harvest here in southern Ontario, which obviously calls for a paleo peach cobbler with coconut whipped cream. Aside from being downright delicious, the peaches in this recipe have a number of skin benefits as well.

Before we get into the advantages of peaches for the skin, we need to chat about where you source your peaches from. Personally, I picked these peaches up from Bizjak Farms — they’re a wonderful family owned farm transitioning to organic.

First up, purchasing food grown in your community supports the environment by reducing your food miles. Local food has a significantly smaller carbon footprint than food shipped from overseas because it creates little to no air pollution or fuel consumption and doesn’t require shipping or packing facilities.

On top of this, local food is fresher, has a higher nutrient content, supports the local economy and protects local land and wildlife.

Benefits of Peaches for the Skin

The peaches in this paleo peach cobbler with coconut whipped cream have a number of benefits such as reducing allergy symptoms and supporting the immune system. When it comes to the skin, here are a few more advantages of peaches: 

1. Packed with Antioxidants

Peaches have an abundance of vitamins and minerals, especially from the antioxidant family. Here’s a breakdown:

  • Vitamin A: 10% of the Daily Value (DV)
  • Vitamin C: 17% of the DV
  • Vitamin E: 5% of the DV

The vitamin A in peaches can help fight off acne and scars because it stimulates cell turnover, reduces oil production and then clears the pores. This antioxidant also decreases signs of aging, brightens the skin and protects your skin from the sun’s damaging UV rays. The vitamin C in peaches can stimulate the production of collagen. This protein promotes cell turnover, keeps the skin firm and strengthens the skin’s structural matrix. Vitamin E can moisturize and soothe dry, flaky skin and reduce UV damage to the skin.

2. Improves Digestion

There are two grams of fibre in one medium-sized peach, which can help promote healthy digestion and then clear skin.

Half of the fibre in a peach is soluble fibre, which feeds the good bacteria in your gut. These friendly bacteria then produce short-chain fatty acids like butyrate that feed the cells in your intestines. A healthy population of beneficial gut bacteria is vital because optimal gut health is the foundation for clear skin.

The other half of the fibre is insoluble fibre, which helps push food through your GI tract and adds bulk to your stool. This is the type of fibre that reduces the risk of constipation. Healthy daily bowel movements are super important for clear skin because it gets rid of acne-triggering toxins and hormones filtered by your liver and prevents them from being reabsorbed.

3. Keeps the Skin Hydrated

Studies also show that compounds within peaches can improve the skin’s ability to lock in moisture.

When it comes to acne, dehydrated skin can lead to irritation, flakiness and dryness. In order to compensate, the body will produce excess oil resulting in more breakouts. That’s why you need to keep your skin hydrated by drinking plenty of water and consuming food with a high-water content like the peaches in this paleo peach cobbler with coconut whipped cream.

Paleo Peach Cobbler with Coconut Whipped Cream

Summer is the perfect time to make a paleo peach cobbler with local fruits in season. Top with coconut whipped cream for a yummy treat.

Ingredients

For the filling:

  • 10 medium peaches peeled pitted and sliced (see notes)
  • 3 tbsp coconut sugar
  • 1 tsp cinnamon
  • 1 tsp lemon juice
  • 1 tbsp arrowroot starch
  • 1/8 tsp salt

For the topping:

  • 1 1/2 cups almond flour
  • 1/4 cup arrowroot starch
  • 1/4 cup coconut sugar + 1 tbsp for sprinkling
  • 1 tsp cinnamon + 1/4 tsp for sprinkling
  • 1/4 cup coconut oil or ghee melted
  • 1/4 cup unsweetened non-dairy milk
  • 1 tsp baking powder corn-starch free for true paleo
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt

For the whipped cream:

  • 1 can Cha’s Organics Coconut Whipping Cream chilled in the fridge for at least 4 hours
  • 3 tbsp maple syrup
  • 1/2 tsp vanilla

Instructions

  • Preheat oven to 375F and grease a 9" pie dish.
  • In a small bowl, mix all the filling ingredients (minus the peaches)
  • Add peaches and the filling mixture to the dish. Gently mix until well combined.
  • In a separate mixing bowl, combine all the topping ingredients.
  • Mix until well combined. Dollop topping mixture on top of the peach filling.
  • Sprinkle with 1 tbsp of the coconut sugar and 1/4 tsp of the cinnamon.
  • Bake in the oven for 25-30 minutes -- or until crust is cooked through. Slightly cool before serving.
  • Just before serving, add coconut cream, maple syrup and vanilla to the mixer bowl. Beat with the mixer on high until light and fluffy.
  • Plate cobbler and top with whipped cream. Serve immediately.
  • Store any unused whipped cream in a covered bowl. Beat gently with a fork for next use.

Notes

To peel peaches: score an X in the bottom of each peach. Boil a pot of water and blanch peaches for 30 seconds and then place in an ice bath for 3-5 minutes. Peel skin off the peach (should slide right off).
You can use full fat coconut milk in place of the whipping cream. Chill for at least 4 hours and scoop ONLY the hard coconut milk on the top of the can. Use immediately as it won't retain its shape once warm.
Store any uneaten cobbler covered in the fridge and consume within 3 days. Reheat in the oven at 375F for desired amount of time.
