Simple Sweet Green Juice

Now that the weather is finally warming up here in Southern Ontario, my juicer has been making many appearances on the kitchen counter. One of my favourite recipes to make is this Simple Sweet Green Juice. By combining leafy greens like kale and spinach with pineapple and lemon you get a nutrient-rich juice that’s not too earthy. Even my 2 ½-year-old, Jackson, enjoyed his little mason jar of green juice.

Why Juice?

The majority of the juice on store shelves have been processed with high levels of heat or oxygen. This process denatures the enzymes and breaks down the nutrients, making the juice almost nutritionally dead. Making your own allows you to enjoy a more nutrient-rich juice with a cornucopia of vitamins, minerals, and enzymes.

There are about 12 servings of vegetables and 5 servings of fruit in this juice recipe. Per serving, that’s about 3 servings of veggies and 1 ¼ serving of fruit. Just a reminder: Drinking any type of juice does not replace your need to include whole vegetables in your daily diet. This makes a great addition to an already healthy diet looking to boost up their nutrient-intake in a quick and easy way.

Adding a Little Spice

If you follow Traditional Chinese Medicine practices, you know cold foods can dampen the digestive system. Adding a little ginger to the juice allows you to help keep your digestion warm and happy.

Not only is ginger is warming to the body but it also contains the bioactive compound, gingerol. With powerful medicinal properties, gingerol helps to give ginger it’s incredible anti-inflammatory and antioxidant properties.

Ingredients

  • 6 stalks kale
  • 4 cups baby spinach
  • 2 cucumbers
  • 1 whole pineapple peel and quartered
  • 1 whole lemon peeled and quartered
  • 1 ” piece ginger

Instructions

  • Wash and prep your produce.
  • Juice items in the listed order.*
  • Pour into glasses and enjoy immediately.

Notes

*After juicing all the produce, I pour the pulp into a bowl and then re-juice the pulp to get all the juice I can.
