Simple Blueberry Chia Seed Jam
With only 3 ingredients (and no sugar!) this really is the perfect jam. Enjoy it with coconut yogurt or topped on weekend pancakes.

- 3 cups frozen organic blueberries
- 2 tbsp. chia seeds
- ¼ cup raw honey or maple syrup
Optional:
- 1 tsp. pure vanilla extract
- ¼ tsp. ginger ground
- Pinch unrefined sea salt
Over medium heat, bring the blueberries to a simmer.
Add chia seeds and mix well.
Cook down to your desired consistency - about 10 minutes. I like to mash the blueberries down a little with the spoon.
Remove from heat - add the raw honey or maple syrup and any optional boosters. Adjust sweetness if needed.
Keep in a glass mason jar in the fridge for up to one week. These also freeze great!
Make a big batch and freeze extras in mason jars. Just make sure to fill the jars no more than 3/4 full to preventing the jar from cracking.
