For the Dressing

extra virgin olive oil

Instructions
In a large bowl, combine all the marinade ingredients.
Add the salmon cubes to the bowl, gently mixing until the salmon is well coated. Set aside and let it marinate for 20 minutes.
While the salmon is marinating, prepare the dressing by whisking together all the dressing ingredients in a small bowl.
Heat a large pan over medium-high heat and add 1 tbsp of avocado oil.
Pan-fry the marinated salmon pieces for 2-3 minutes, turning frequently with tongs until they are cooked through.
Assemble the bowls by starting with a base of cooked rice, then arrange the salmon and your choice of vegetable toppings and nori strips on top.
Drizzle the bowls with the prepared dressing and garnish with sesame seeds if desired.
