Salmon Poke Bowl

This Salmon Poke Bowl is crafted to nourish your skin from the inside out with a balanced blend of ingredients.

Ingredients

For the Marinade

  • 1 tsp garlic powder
  • 1 tsp ginger
  • 1 Tbsp avocado oil
  • 1 Tbsp honey
  • ¼ cup tamari

For the Bowl

  • 2 salmon fillets (chopped into cubes)
  • 1 cup rice (cooked)
  • ½ cucumber (sliced into ribbons)
  • ½ cup red cabbage (shredded)
  • 1 green onion (sliced)
  • 2 watermelon radishes (thinly sliced)
  • 1 avocado (sliced)
  • 2 nori sheets (cut into strips)

For the Dressing

  • 3 Tbsp extra virgin olive oil
  • 2 Tbsp rice vinegar
  • 1 Tbsp honey
  • 1 Tbsp sesame oil
  • 1 tsp tamari
  • ¼ tsp ginger
  • Pinch of sea salt

For the Garnish

  • Sesame seeds (optional)

Instructions

  • In a large bowl, combine all the marinade ingredients.
  • Add the salmon cubes to the bowl, gently mixing until the salmon is well coated. Set aside and let it marinate for 20 minutes.
  • While the salmon is marinating, prepare the dressing by whisking together all the dressing ingredients in a small bowl.
  • Heat a large pan over medium-high heat and add 1 tbsp of avocado oil.
  • Pan-fry the marinated salmon pieces for 2-3 minutes, turning frequently with tongs until they are cooked through.
  • Assemble the bowls by starting with a base of cooked rice, then arrange the salmon and your choice of vegetable toppings and nori strips on top.
  • Drizzle the bowls with the prepared dressing and garnish with sesame seeds if desired.
