Gently warm the water on the stove; it should be just warm, not hot, to touch.
Remove from heat, then stir in the raw honey until it’s fully dissolved (this helps preserve the honey's beneficial properties).
Add fresh mint leaves, giving them a light bruise with your fingers before dropping them in to release their oils.
Juice Your Grapefruit & Lime:
While your honey syrup is cooling down, squeeze enough grapefruit to get 1/2 cup of juice and do the same with the lime to get about one tablespoon of juice.
Prep the Glass:
On a flat plate, mix coarse sea salt with grapefruit zest.
Rub a lime wedge around the rim of your glass, then dip it into the salt-zest mix to coat the rim.
Assemble the Mocktail:
Combine ½ cup fresh grapefruit juice, 1 tbsp lime juice, 2-3 tbsp of the mint simple syrup and a pinch of sea salt in a mason jar or cocktail shaker. If you like, gently muddle fresh mint in the jar/shaker for an extra minty kick.
Add ice to the prepared glass.
Shake the mixture well, then strain into the glass over the ice.
Top off with ½ cup of sparkling water.
Optional Garnish:
If desired, add a slice of grapefruit, a wedge of lime, and a sprig of fresh mint.
Notes
For a sweeter flavour: Adjust the honey in the mint syrup to taste.
For a more minty flavour: Use more fresh mint in the syrup or muddling step.
Time Saver: Use store bought grapefruit juice and skip making the mint simple syrup. Instead, blend the grapefruit juice, lime juice, and honey directly in a blender. Then, simply muddle some fresh mint directly in your glass before adding the blended mixture and then topping with sparkling water. Garnish as desired.
