Maple Walnut Apple Crisp (Paleo + Vegan)

A healthy version of a classic recipe, this apple crisp is full of flavour with warming spices, dark maple syrup and crunchy walnuts.

Ingredients

For the filling:

  • 6 large honey crisp apples; peeled cored and cut in 1” chunks
  • ¼ cup coconut sugar
  • 2 tbsp arrowroot starch
  • 1 tbsp lemon juice
  • 2 tsp vanilla
  • 2 tsp cinnamon
  • ½ tsp ginger
  • ½ tsp nutmeg
  • 1/8 tsp sea salt

For the topping:

  • 1 cup almond flour
  • 1 cup crushed walnuts
  • ¼ cup maple syrup
  • 1 tsp vanilla
  • ¼ cup coconut oil room temperature
  • 1 tsp cinnamon
  • ½ tsp ginger
  • ½ tsp nutmeg
  • 1/8 tsp sea salt

Instructions

  • Preheat oven to 350F. Grease a 13” x 9” casserole dish with coconut oil. Set aside.
  • Add all the ingredients for the filling to a large bowl. Gently mix until the apples are well coated.
  • Pour apple mixture into the greased casserole dish.
  • In the same bowl, add all the ingredients for the topping. Mix until crumbly.
  • Crumble the topping over the apple mixture.
  • Place in the oven and bake for 40 minutes or until the top is golden brown.
  • Remove from the oven and let sit for 10 minutes before serving.

Notes

For a nut-free version, tigernut flour can be used in place of the almond flour and shredded coconut in place of the walnuts.
