Roasted Garlic Cauliflower Mash

The antioxidant rich garlic and the anti-inflammatory powers of cauliflower make this a delicious skin-loving side dish for the holidays.

Ingredients

  • 1 head of garlic
  • Drizzle of avocado oil
  • 1 head of cauliflower (cut into florets)
  • 1 Tbsp olive oil
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • 1/4 cup nutritional yeast (optional for cheesy flavour)

Instructions

For the Roasted Garlic

  • Preheat the Oven: Set your oven to 400°F (200°C).
  • Prep the Paper: Cut parchment paper into squares slightly larger than each garlic bulb.
  • Trim the Garlic: Peel away any loose skin from the garlic bulb, keeping it intact. Slice about ¼ inch off the top of the bulb to expose the cloves.
  • Wrap It Up: Place the garlic on a piece of parchment paper. Wrap the paper around the garlic, twisting the top to secure it.
  • Roast: Place the wrapped garlic on a sheet pan and roast in the oven for 30 to 40 minutes, or until the cloves are soft and lightly browned.
  • Cool: Remove from the oven and let it cool enough to handle.

For the Cauliflower Mash

  • Steam Cauliflower: In a large pot, steam the cauliflower florets until very tender.
  • Blend: Transfer the steamed cauliflower to a food processor or high-speed blender. Add olive oil, cloves from the roasted garlic, lemon juice, salt, and pepper. As well, include nutritional yeast if using.
  • Puree: Blend until the mixture reaches a smooth, pureed consistency.
  • Season to Taste: Sample the mash and adjust the seasoning as needed.
  • Serve: Once seasoned to your liking, your cauliflower mash is ready to enjoy!
