Ingredients

organic baby red potatoes
quartered with skin on
1/3

fresh dill
finely chopped
1/3

fresh parsley
finely chopped

fresh chives
, finely chopped
For the dressing:
1/4
cup
extra virgin olive oil
2
tbsp
lemon juice
2
tbsp
pickle juice
1
tbsp
vegan mayo
optional
1
tsp
dijon
1
garlic clove
minced
Unrefined salt
to taste
Instructions
Boil the potatoes until fork tender (about 10 minutes). Set aside to cool.
In the meantime, combine all the dressing ingredients in a small jar and shake to combine.
Pour dressing over potatoes and add fresh herbs. Mix gently until well combined.
Enjoy immediately or cover and place in the fridge for the next day.
