Herbed Potato Salad

Resistant starches like the potatoes in this herbed potato salad have a number of health benefits for promoting clear skin.

Ingredients

  • 1.5 lbs organic baby red potatoes quartered with skin on
  • 1/3 cup fresh dill finely chopped
  • 1/3 cup fresh parsley finely chopped
  • 1/4 cup fresh chives , finely chopped

For the dressing:

  • 1/4 cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 2 tbsp pickle juice
  • 1 tbsp vegan mayo optional
  • 1 tsp dijon
  • 1 garlic clove minced
  • Unrefined salt to taste

Instructions

  • Boil the potatoes until fork tender (about 10 minutes). Set aside to cool.
  • In the meantime, combine all the dressing ingredients in a small jar and shake to combine.
  • Pour dressing over potatoes and add fresh herbs. Mix gently until well combined.
  • Enjoy immediately or cover and place in the fridge for the next day.
