Ingredients

cups
100% pure pineapple juice
1
L
sparkling mineral water
1/3
cup
ginger honey simple syrup
see below
¼
cup
lime juice
1
tsp
vanilla extract
Ginger Honey Simple Syrup
¼
cup
fresh ginger
chopped
½
cup
water
1
cup
honey
To garnish:
Pineapple wedges
Sprig rosemary
Instructions
For the simple syrup
Add all ingredients to a small saucepan.
Bring to a low boil over medium heat.
Reduce to low and simmer 5 minutes
Remove from heat and let cool.
Strain ginger and discard.
Store up to 2 weeks in the fridge (I use it in herbal teas).
To assemble:
Combine all ingredients in a large pitcher. Stir well.
Pour into a glass (over ice if desired) and garnish with pineapple wedge and rosemary sprig.
