Sparkling Pineapple Ginger Mocktail

Enjoy the holidays sans alcohol with my Sparkling Pineapple Ginger Mocktail. Refreshing, warming, and rejuvenating. Perfect to enjoy in the winter months!

Ingredients

  • 3 cups 100% pure pineapple juice
  • 1 L sparkling mineral water
  • 1/3 cup ginger honey simple syrup see below
  • ¼ cup lime juice
  • 1 tsp vanilla extract

Ginger Honey Simple Syrup

  • ¼ cup fresh ginger chopped
  • ½ cup water
  • 1 cup honey

To garnish:

  • Pineapple wedges
  • Sprig rosemary

Instructions

  • For the simple syrup
  • Add all ingredients to a small saucepan.
  • Bring to a low boil over medium heat.
  • Reduce to low and simmer 5 minutes
  • Remove from heat and let cool.
  • Strain ginger and discard.
  • Store up to 2 weeks in the fridge (I use it in herbal teas).

To assemble:

  • Combine all ingredients in a large pitcher. Stir well.
  • Pour into a glass (over ice if desired) and garnish with pineapple wedge and rosemary sprig.
