6organic appleslike Honeycrisp, Braeburn, or pink lady
6Medjool datespitted and chopped
¼cupraw pecanscrumbled
¼cupraw pumpkin seeds
½cupmaple syrup
1tbspground cinnamon

Instructions
Preheat the oven to 350 F.
Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Place in a glass pyrex dish.
Combine dates, pecans, and pumpkin seeds in a bowl. Evenly stuff the mixture into the well of each apple, leaving a small mound on top of each.
Drizzle with maple syrup and sprinkle with cinnamon.
Add a splash of water to the bottom of the pan to help prevent syrup from burning.
Bake for about 45 minutes or until the apples are tender, but not mushy. Use a spoon to use any of the liquid in the bottom of the pan to pour over each apple.
