Cinnamon Baked Apples with Pecan Date Filling

Tart baked apples stuffed with juicy dates, crunchy pecans, and raw pumpkin seeds. Best part? They're also drizzled with maple syrup and sprinkle with cinnamon.

Ingredients

  • 6 organic apples like Honeycrisp, Braeburn, or pink lady
  • 6 Medjool dates pitted and chopped
  • ¼ cup raw pecans crumbled
  • ¼ cup raw pumpkin seeds
  • ½ cup maple syrup
  • 1 tbsp ground cinnamon
  • Splash of water

Instructions

  • Preheat the oven to 350 F.
  • Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Place in a glass pyrex dish.
  • Combine dates, pecans, and pumpkin seeds in a bowl. Evenly stuff the mixture into the well of each apple, leaving a small mound on top of each.
  • Drizzle with maple syrup and sprinkle with cinnamon.
  • Add a splash of water to the bottom of the pan to help prevent syrup from burning.
  • Bake for about 45 minutes or until the apples are tender, but not mushy. Use a spoon to use any of the liquid in the bottom of the pan to pour over each apple.
  • Remove from oven and cool to just warm.
