Classic Grain-Free Stuffing with Savoury Herbs

- 1 tbsp avocado oil + 1 tsp for greasing the dish + 1 tsp for baking olive oil works too
- 2 medium red onions diced
- 3 stalks celery finely diced
- 1 apple cored and chopped
- 1 tbsp sage dried
- 1 tbsp thyme dried
- 1 tbsp rosemary dried
- 1 tsp oregano dried
- 2 cups almond flour
- 4 medjool dates pitted and chopped
- ½ cup fresh parsley chopped
- 3 eggs whisked
- Unrefined sea salt to taste
Preheat oven to 350 F and using 1 teaspoon of oil to grease your baking dish.
Heat 1 tablespoon of oil over medium-high heat. Add the onion, celery, apples, and dried herbs. Cook until the onions are translucent (about 5-7 minutes).
In the meantime, combine the almond flour, dates, and fresh parsley in a large bowl.
Add the onion and celery mixture to the almond flour. Stir until well combined.
Fold in the whisked eggs and sea salt. Pour into greased baking dish and drizzle with remaining olive oil.
Bake for 45 minutes or until golden brown on top.
